Starter cultures are preparations of living micro-organisms used to facilitate fermentation.

In meat products, two main types of micro-organisms are used : Lactic Acid Bacteria and Micrococcaceae, which, in this case, are obviously produced by THT.

In the meat processing industry, starter cultures are usually employed to satisfy quality and increase yields.
